These sparkling wines have been crafted using the Charmat technology from own-grown grapes. The viticulturists and the sparkling winemaker allocated about 260 Ha of vineyards stretched along the southern slopes of the Taman hills, particularly fit for corresponding grape varieties, for the production of sparkling wines. To make the wine, only fully ripen hand-picked grapes were used. The Blanc de Blancs and Blanc de Noirs Bruts have been made with additional maturation on yeast.
