Peculiarities of vinification. The wine is crafted from Cabernet Sauvignon, a classic wine grape variety, grown in best locations of Fanagoria vineyards located in the Taman peninsula, with a controlled yield of no more than 6 tons per hectare. The grapevines are cultivated with the use of most state-of-the-art viticultural technologies; the grapes are harvested manually as soon as they have reached the optimum level of ripeness. The winemaking technique includes delicate fermentation in temperature-controlled stainless-steel tanks, barrel maturation for at least 12 months in French oak barriques, and subsequent bottle seasoning for at least 6 months.
Sensory characteristics. This deep-red wine has a compound bouquet with a domination of spicy and vanilla flavours at the background of the ‘smoky mist’ of the oak barrique. Taste: classic varietal, with notes of blackcurrants, tobacco, prunes, and leather. An excellently structured and well-balanced exquisite wine.
Food pairing: this wine would be a good pair to game, grilled meat and soft cheeses.
