Peculiarity of vinification. The wine is crafted by méthode classique from Meunier grapes (an obsolete name – Pinot Meunier), a rare variety for Russia. The vineyard block allocated for the sparkling wines is equidistant from the Black and the Azov Seas at approximately 25 km. Maturation on lees for at least 9 months. Tirage – 13,304 bottles.
Sensory characteristics. Colour: flesh of white peach. Flavour opens up with delicate notes of brioche, elegant notes of white and yellow cherry, ripe pineapple, whitecurrants, honeysweet plums, and flowers of apple-tree, wild rose, pink peony, and soapberry. Taste: fresh, rounded, and gastronomic. In the creamy and fruity aftertaste, the final touch is put by nuances of green apple.
Food pairing: light vegetable hors d’oeuvres, salads, canape, seafood, fish.
