Peculiarities of vinification. This natural sweet dark-ruby-coloured wine is crafted from Saperavi grapes, grown in the vineyard of the protected geographical indication «Kuban. Taman peninsula». The grapes are left on the vine until the sugar level of 320-330 g/l is attained. Due to the high density of the wine and the sugar level, the fermentation proceeds very slowly and requires permanent control of winemakers – but it eventually gives a light sweet wine.
Sensory characteristics. Flavour: rich, with buttery notes and nuances of sour cherry, sloe, blackberries, prunes and chocolate. The wine feels fresh on the palate, with a piercing acidity and broad spectrum of notes of ripe sour and sweet cherry and chokeberries, and a long berrylike finish.
Food pairing: desserts based on chocolate sponge cake and cottage cheese and berry cream; vanilla or berry plombières; salad with roast beef and mushrooms.
To be served at 5 - 7 °С.
Important! In Georgian, Saperavi means ‘painter’, ‘dye’, ‘colour giver’, because the berries of this grape variety contain a great number of anthocyans (a colouring matter), so do not wonder if your mouth and the glass will become coloured after you have tasted this wine.
