Muscat

White dessert wine
Grapes: Muscat
Sugar 120 g/l
Volume 500 ml
Alcohol 12%

Manufacturing peculiarities. This elegant sweet golden-to-straw-coloured wine is crafted from Muscat grapes, grown in the vineyard of the protected geographical indication «Kuban. Taman peninsula». The grapes are left on the vine until they begin to shrivel and turn to raisins. After harvesting, the grapes are put into temperature-controlled chambers, where the process of shrivelling continues until the sugar level of 35–40% is attained. Due to the high density of the wine and the sugar level, the fermentation proceeds very slowly and requires permanent control of winemakers – but it eventually gives a light sweet wine.

Sensory characteristics. Flavour: exquisite, honeylike-flowery with notes of ripe apricots. The wine feels fresh on the palate, with notes of apricot jam and nuts, and a long citric aftertaste with a broad spectrum of dried fruit.

To be served at 5-7 °С.

Food pairing: desserts based on cottage cheese cream, dried fruit or fresh apricots, yellow apples, peaches or pears; vanilla plombières; honeycakes; chicken or pork rolls under honey sauce.
